CCA, Manila set to shine in Australia

The Philippines’ top culinary school, the Center for Culinary Arts (CCA, Manila), is set to shine in Australia as they bring the best of Filipino cuisine down under. The CCA team will prominently participate in Melbourne’s Food and Wine Festival that will be held along the Yarra River on March 2 to 12, 2012.
Together with the Northcote Social Club Restaurant in Melbourne, CCA chefs and students will be preparing a traditional Filipino lunch buffet called “Filipino Barbie (barbeque)” which will include lechon and sisig to name a few. The CCA team aims to elevate Filipino cuisine to a higher level and promote this culinary experience in Australia. Aligned with this purpose, CCA, Manila also fostered a partnership with William Angliss Institute where CCA chefs will do a cooking demo of Filipino dishes. In return, instructors from William Angliss will teach the students how to brew delightful coffee concoctions and expose them to innovative techniques during their Coffee Class.

CCA, Manila, the premier school for culinary education in the country, has already received many recognitions and awards. Its chef-instructors are now officially certified culinary professionals by the prestigious American Culinary Federation (ACF), the first batch of chefs in the Philippines to be conferred such by the largest and most prestigious culinary association in America.
ACF is the largest professional chefs organization in North America, with more than 22,000 members who belong to more than 225 chapters in four regions across the US. Sanctioned by the Council on Higher Education for Accreditation, ACF is the only organization to accredit culinary arts, baking and pastry programs in the US. Junior Chef Cup Challenge 2011: Kids Cooking for Kids – Second Round
Taal Vista Hotel witnessed the exciting second leg of culinary eliminations of the Junior Chef Cup Challenge held last September 11, 2011.
The Junior Chef began that weekend with a tour at old Kano’s Farm, a 1-hectare farm in Silang, Cavite, where they learned more about organic farming. The following day, they attended a class on Personality Development conducted by Ms. Paul I Genuino of Etiquette de Manille and F & B World Magazine.

The culinary competition kicked off after giving the contestants 90 seconds to pick and gather their ingredients from the on-site market and 90 minutes to prepare their dish. Top caliber judges to evaluate the dishes included Celebrity Chef Judge Sau del Rosario, renowned Chef Judge Boy Logro of Idol sa Kusina (GMA7), and Chef Judge Gigi Angkaw of the Center for Culinary Arts (CCA), Manila.

CCA, Manila's dominating presence was once again felt in the culinary world with its very own Chef Gigi Angkaw gracing the event and given the challenging task of judging the future Filipino master chef. With her eye on cooking techniques and kitchen management skills, the young chefs were jubilant enough to personally talk and learn from the master herself. Chef Gigi also provided words of encouragements that helped ease the tension felt by most of the budding young chefs.
Among the 11 Junior Chef Cup Challenge finalists, only 5 will emerge to qualify for the final round. The Top 5 Junior Chefs will be competing for the following prizes: Grand Champion will receive Php 20,000 cash, a trip for 3 to Australia with airfare and accommodations, exclusive culinary lesson by the top Chef from the Center for Culinary Arts (CCA), Manila, a 15-day Young Chef Boot Camp summer short course and a personalized CCA, Manila apron. Silver Award will receive Php15,000.00 cash, a trip for 3 to Legaspi City with 3 days 2 nights stay at Ellis Ecotel, exclusive culinary lesson by the top Chef of CCA, Manila, a 10-day Young Chef Boot Camp summer short course, and a personalized CCA, Manila apron. Bronze Awardee will receive Php10,000.00 cash, a trip for 3 to Boracay with 3 days 2 nights stay at Hotel Sofia, a culinary lesson by the top chef of CCA, Manila, a 5-day Young Chef Boot Camp summer short course, and a personalized CCA, Manila apron. In partnership with the Dept. of Tourism, Chef Edgar Grajo, winner of "Kulinarya : A Filipino Culinary Showdown" in San Francisco, California last Dec. 2010 gave a cooking demonstration of his versino of popular Filipino dishes. This event was attended by DOT Top Officials, Tour Operators, Travel Agents and food writers and Chefs Myrna Seguismundo, Jessie Sincioco & Glenda Baretto. This event was held at the Culinary Theater at CCA, Manila.

CCA, Manila held a Tribute Dinner for Ms. Nora V. Daza held on February 16,2011 at C3 Events-Place, Greenhills. CCA, Manila honored Ms. Nora V. Daza for her contributions by serving as an inspiration to the academic community in promoting Filipino Cuisine to the world.
This event was attended by Ms. Nora Daza's family and friends, as well as representatives from the industry, dignitaries, and media. Dishes that were served on this night were Ms. Daza's own recipes and were carefully prepared by CCA, Manila's alumni and instructors and served by chef-students. Ms. Daza's family members and friends whom she had inspired told anecdotes and gave her their messages. Ms. Daza was also serenaded by several musical performances and was presented with roses.
Aside from being a pioneering restaurateur and best-selling cookbook writer, some of Ms. Nora Daza's other achievements are:

CCA, Manila is dedicating the improvement of a kitchen laboratory an call it NORA V. DAZA Asian Filipino Kitchen Laboratory. This room will be dedicated to the training of young men and women who shall uphold and promote the Filipino Cuisine to the world. It will honor Ms. Nora V. Daza for her advocacy in promoting Filipino Cuisine in the international market and serving as a model and inspiration to fellow culinarians.

CCA, Manila celebrated its 14th Foundation Day
CCA, Manila celebrated 14 years of leadership last Friday, November 26th. The event started early with "Salon Culinaire", a competition among CCA students organized by Société D' Excellence, followed by several cooking demos by chef-instructors. The event culminated with the Foundation Day program held at Oceana. It featured performances by CCA students, launching of the School Hymn and the School Seal. The whole event concluded with a club scene.

CCA, Manila and the Northern Alberta Institute of Technology tap Manila Hotel as partner

MANILA, Philippines - Manila Hotel served as the perfect venue for an apprenticeship program held recently for six foreign students from the Northern Alberta Institute of Technology (NAIT), Canada. The event was organized through a partnership with the country’s pioneer culinary institute the Center for Culinary Arts (CCA) Manila.
This year, six students from NAIT, namely Melissa Katherine Laan, Miranda May Baxter, Mary Ann Aquino, Tanya Marie Lesiuk, Jan Lucian Abia, and Sheldon Colby Polowick, came to the Philippines for a three-week training stint at the Manila Hotel. They were accompanied by chef Vinod Varshney, program Chairperson at NAIT’s School of Hospitality and Culinary Arts.
“We feel honored having been selected by CCA Manila as the setting of the apprenticeship,” said Manila Hotel general manager Leon Keekstra. “We are very glad to host them here and provide them with the five-star hotel kitchen exposure that they need. We’d love to work with CCA Manila and NAIT for future apprenticeship programs.” Overseeing the training schedule of the students was Manila Hotel executive sous chef Christine Zarandin. “They were very appreciative of what they learned, and they really absorbed everything well. They were open to different stuff and in trying the local food, and even copied recipes to bring home with them. I did not see anybody take a break during their work schedule and they were very efficient even if we have different kitchens compared to what they are probably used to in Canada,” chef Christine related. “We really wanted them to see exactly what happens in a five-star hotel environment, to gauge whether they can handle the pressure of serving different kitchens while ensuring that every plate looks and tastes perfect. I believe they were very happy with their experience here.”
