CCA's academic programs start with one-year programs in Culinary Arts and Baking-Pastry arts that provide the basic foundations of the theories of food preparation and baking.

After successful completion of year one, you have an option to apply for either the two-year program in Culinary Arts & Technology Management or Baking-Pastry Arts & Technology Management.  The second year of study develops advanced skills in food preparation and baking-pastry arts, international cuisines, management and entrepreneurship.

An International Degree Succession program is available through our partner schools should you decide to enhance your one- or two-year program and earn a degree:


In North America

Succession program available for CCA since 1996.

A key player during CCA Manila's foundation years, the Northern Alberta Institute of Technology (NAIT) is a leader in technical training and applied education designed to meet the demands of Alberta's industries.  NAIT graduates provide the skilled workforce required to support today's global, knowledge-based economy.
 
NAIT culinary students and faculty strongly figure in international culinary competitions, including the International Culinary Olympics held in Germany.


CCA graduates have the option to obtain any of the following from NAIT:

*Diploma in Culinary Arts
*Diploma in Applied Food and Beverage Supervision

Succession program available for CCA since October 2005.

Les Roches, Swiss Hotel Association, School of Hotel Management prepares international students committed to a career in the service industries for success. Its model hospitality education programmes balance theory with practice, independent learning with strong faculty support, and a foundation for lifelong learning with the skills for immediate employment and progress to leadership positions in the industry. Through international sites the Les Roches model of education is accessible to students throughout the world.

CCA graduates have the option to obtain the following from Les Roches:

*Hotel Operations III - Certificate in International Hotel Operations
*Higher Diploma in Hotel Management
*Swiss Hotel Association (SWA) Diplôme
*Top-up Degree to Bachelor of Business Administration in International Hotel Management  (with Finance or Marketing)

Thames Valley University

Succession program available for CCA since June 2006.

Thames Valley University's London School of Tourism, Hospitality and Leisure has an international reputation for its courses.

The school has achieved many accolades. The Academy of Culinary Arts, The Association Culinaire Francaise, The Craft Guild of Chefs and The Master Chefs of Great Britain all recognise the School of Tourism, Hospitality and Leisure as a centre of excellence, quality and innovation.  The School also achieved COVE status (a Centre of Vocational excellence) in 2003.

TVU was the first University in the country to receive the highest grade for its hospitality and culinary arts courses from the Training Skills Council, and the Governments Quality Assurance Agency (QAA) has awarded its 'London School of Tourism, Hospitality and Leisure' an 'excellent' rating for the quality of its teaching, course design and support it gives to its students.

CCA graduates have the option to obtain the following from TVU:

*Bachelor of Arts in Culinary Arts Management

Since its establishment in 1991, the Blue Mountains Hotel School (BMHS) has enjoyed remarkable growth. With a placement success matching its growth rate, the School continues its proud tradition of integrity, quality and educational excellence. Today, over 3000 students have studied at the school.  Of those who have completed their studies, most are presently working in the hospitality industry around the world.
