Which means a lot because it comes from the biggest (membership: 19,000) and most prestigious organization of professional chefs in the world today, the American Culinary Federation Foundation.

The ACF bestowed this honor upon us this year, coinciding with our 11th Anniversary. Giving us another reason to celebrate.


Not because it makes CCA the first culinary institution in Asia to be given ACF accreditation, but more it because it allows our graduates to virtually work anywhere in the world as certified culinarians.
Which to us, is simply sumptuous.

Center for Culinary Arts, Manila: the 1st and Only School in Asia & the Pacific with academic programs accredited by the accrediting commission of the American Culinary Federation Foundation:

* Two-year (Diploma) Program in Culinary Arts & Technology Management
* One-year (Certificate) Program in Baking & Pastry Arts

The American Culinary Federation, Inc. is the largest professional, not-for-profit organization for chefs and cooks in the United States, and was founded more than 75 years ago. ACF promotes the culinary profession by providing professional development, career building and networking opportunities to its members.

Overview

Since 1929, the American Culinary Federation, Inc., (ACF) has represented cooks, chefs and culinary professionals in the United States. Because providing ongoing professional training is a primary goal of the organization, ACF created its certification, education and apprenticeship programs to represent the educational needs of the culinary profession. As culinary careers gained more prominence, culinary programs developed at an accelerated rate. ACF recognized a need to develop a system to monitor culinary programs for culinary performance and, as a result, the Accrediting Commission was formed in 1986.

What Is Accreditation?

According to the 2006 Council for Higher Education Accreditation (CHEA®), accreditors in the United States are private, nongovernmental organizations created for the specific purpose of reviewing higher education institutions and programs for quality. In most other countries, accreditation (or quality assurance) is carried out by government organizations.

Why Is Attending an Accredited Culinary Program Beneficial to Me?

• The ACFFAC is currently the only regulatory agency that offers programmatic accreditation for post-secondary culinary institutions.

• The ACFFAC is recognized by the Council for Higher Education Accreditation (CHEA®).

• Accredited programs have met or exceeded established industry standards.

• Accreditation standards were developed by industry leaders in both culinary arts and culinary arts education and monitored by the Commission.
• Students who are active members of ACF and graduates of accredited programs are eligible for ACF certification.

Our Academic Programs

CCA, Manila offers strong curricula carefully designed based on the needs of the food preparation and service industry. Only CCA offers extensive programs in Culinary Arts and Baking & Pastry Arts, giving emphasis on hands-on laboratory experience. Courses are technique-based rather than recipe-based, enabling them to be versatile, innovative, and creative, qualities that the industry requires from upcoming chefs.

Management classes are also incorporated in the programs, empowering our students with know-how on entrepreneurship, designed based on the needs of the food preparation and service industry. Apart from lectures and spending at least 5 hours daily in the kitchen laboratories, our students undergo actual hotel work for their apprenticeship to further acquire mastery of techniques. Our students receive positive feedback when they undergo internship at different establishments. Graduates who work abroad have also been noted to meet and even exceed international placement standards.
