CCA, Manila serves 15 Years of Culinary Success
Pioneer culinary school culminate Anniversary Festivities with the Unveiling of a New Building


Fifteen glorious years of culinary excellence. That is how faculty, students and alumni describe the Center for Culinary Arts, Manila , the country’s premier school for the culinary arts, as it celebrated its 15th anniversary recently with a lineup of activities.  It has much reason to celebrate for, with some of CCA, Manila ’s chef-instructors passing the stringent certification exams by the American Culinary Federation (ACF), and the unveiling of the school’s new façade and facilities.

As part of the 15th Anniversary Celebration, a 3-man delegation composed of ACF Chefs Don Dickinson, Derek Spendlove and James Taylor visited CCA, Manila to administer practical tests from the American Culinary Federation Educational Foundation accredited programs for ACF certification to chef instructors on culinary competency. As an industry prime mover and trailblazer, CCA, Manila chefs were the first batch of Filipinos receiving this prestigious culinary career recognition and with such move had also distinguished CCA, Manila an accredited ACF test site for certification in the country.

“We commend CCA, Manila for this most recent achievement, as it coincides with the school’s 15th foundation anniversary,” said Chef Dickinson, who was very much impressed not only with the facilities but also with the quality of students and instructors being produced. “We are proud that the ACF has become part of the school’s pursuit for excellence in culinary education not only in the Philippines but also in the international scene,” Chef Spendlove added.

A special event that coincides with the anniversary is “A Crowd of Three,” which saw three of the country’s top chefs, Ed Quimson, Sau Del Rosario and Robbie Goco, gathered together not only to demonstrate their culinary artistry but also to share knowledge and tips to an interested audience of parents, culinary students, former alumni along with their loved ones.   What makes the culinary demonstration more poignant is that Chefs Ed and Robbie were once part of CCA, Manila :  Chef Ed was member of the Board of Advisors and Chef Robbie was a pioneer-instructor during the early years of the school. “Good food is a right, not a privilege,” was Chef Robbie’s parting message to the audience who learned about Greek cuisine.

On the evening of the anniversary held last November 26, CCA, Manila also unveiled the school’s new façade, with the school’s logo prominently featured on the building’s frontispiece. It also witnessed a large gathering of students, alumni, faculty and guest personalities attending the unveiling. They later proceeded to Cravings Center Events Hall located at the second floor of the building where the testimonial dinner was held. “For us, this is just the beginning of the rest of a lifelong commitment, or better yet, a lineup of commitments. As the pioneering institution for culinary education in the country, we feel that we are responsible not only to ourselves but to the larger community where we belong,” said Dr. Veritas Luna, CCA, Manila’s Managing Director.

Celebrity Chefs Tristan Encarnacion and Rosebud Benitez, both CCA graduates, served as emcees of the event.  During the program, Chefs Spendlove and Dickinson of ACF handed out professional certificates to the school’s faculty members, led by CCA’s Academic Programs Manager, Chef Melissa Sison, who attained an ACF Certified Executive Chef title, a feat making her the first female certified executive chef in the country.  Other awardees include Chef Tim Abejuela (Certified Chef de Cuisine), Chef Mira Cruz (Certified Chef de Cuisine), Chef Jon Tin (Certified Chef de Cuisine), Chef May Martinez (Certified Pastry Culinarian), Chef Guia Angkaw (Certified Sous Chef), Chef April Martinez (Certified Sous Chef), Chef Carol Lavin (Certified Working Pastry Chef), and Chef Anne Atanacio (Certified Working Pastry Chef).

It also became a timely occasion in announcing the recipients of CCA, Manila Recognition Awards, given to the school’s outstanding student, faculty, non-teaching staff and alumni for excellence in service and exceptional contributions to their profession, community and environment.  The awardees were: Outstanding Student Culinary Arts Category – Michael So Cheng, Outstanding Student Baking & Pastry Arts Category – Dennilyn See Sy, Outstanding Faculty Award in Business and Management – Elizabeth Hernandez-Morales, Outstanding Faculty Award in Culinary Arts – Chef April Martinez, Outstanding CCA Employee Award – Joselita Tobilla, Outstanding CCA Manager Employee Award – Chef Melissa Sison, Outstanding Professional Alumni Special Recognition Award – Chef Enrico Magtanong, Outstanding Professional Alumni MGT Chefpreneur Award – Chef Christine Nicole Nicolas, Chef Miguel Angel de Alba, and Chef Jasper Versoza, Outstanding Professional Culinarian Award – Chef Joanna Limoaco-Gendrano, and Outstanding Professional Media Chef Award – Chef Rosebud Benitez. As emcee, Chef Rosebud was elated receiving her award, and gushed “I feel like I was a student again.  I’m grateful to CCA for giving me this recognition.  I learned a lot from this school and I thank Ma’am Annie Guerrero and the school for molding me into a good chef.”

One of the highlights of the evening was the unveiling of the booklet "15 Years Why CCA Knows Best," which showcased not only the achievements and milestones of the school's 15-year history but also paid tribute to the motherly care and guidance of the mother-and-daughter tandem of CCA, Manila and Cravings Group Founder Susana “Annie” Pascual-Guerrero and daughter, Cravings Group CEO Marinela “Badjie” Guerrero-Trinidad, who stewarded the school and its flagship programs and curriculum to its present world-class status.

Chef Carol Lavin and her Level 3 Baking and Pastry Arts students gave everyone a delightful surprise after parading 15 wonderfully-crafted cakes, topped by a five-foot tall tower cake. After blowing the candles, Ma'am Annie wished that CCA, Manila would last for another 15 years, even 25 more years.  “We hope to reach out to more aspiring and budding chefs by creating more satellite campuses, so that we could help fulfill their dreams,” she said about her plans and dreams for the school, as CCA, Manila continues to uphold its banner of excellence in quality culinary education in the Philippines.

The categories of CCAAA Professional Alumni Awards are:

SPG GREEN STEWARD CHEF AWARD
Given to the CCA Manila Alumni who have recognized contributions to the promotion of environment protection and conservation through green initiatives as applied to the Food and Hospitality industry.

MGT CHEFPRENEUR AWARD
Given to a CCA Manila alumnus who has demonstrated the promotion of entrepreneurship and sustainable business through excellent application of culinary management skills.

 NORA V. DAZA PROFESSIONAL CULINARIAN AWARD
Given to a CCA Manila alumnus who has contributed to the promotion of the Filipino Cuisine to the Asian and international markets.

 CULINARY MEDIA AWARD
This award is conferred to a CCA Manila alumnus who has promoted the culinary arts as a profession and distinct discipline through the media. He/She may be involved in any one or combination of food writing, food photography, culinary or food publication, TV/Radio/Print production or appearances, advertising and live appearances.

CHEF EDUCATOR AWARD
Award given to a CCA Manila alumnus who has contributed to the promotion of culinary education and training for the upliftment of the culinary profession.

CCA MANILA OUTSTANDING PROFESSIONAL CULINARIAN AWARD
This award is conferred to a CCA alumnus who has contributed significantly to the culinary industry and the society; demonstrated leadership in his/her field; displayed exemplary involvement to environmental activities and efforts towards food sustainability; and promoted Filipino Cuisine in the local or international markets.

Who may Nominate

The following individuals listed below may nominate qualified candidates to the awards.

  2. CCA Management, Officers and Faculty
  3. Industry Colleagues
  4. Work Superiors, Subordinates and Co-employees
  5. Professional and Student Culinarians

 

Criteria for Nominations

  1. Must be a bona fide graduate of the Diploma in Culinary Arts and Technology Management (DCATM), Diploma in Baking and Pastry Arts Management (DBPAM), Certificate in Baking and Pastry Arts, or Certificate in Culinary Arts program of the Center for Culinary Arts, Manila
  2. Must be of good social standing
  3. Should have at least 5 years gainful industry experience in the culinary field
  4. Should be willing to be nominated to the awards

 

Criteria for Selection

  1. Continuing growth and development in culinary and related areas
  2. Exemplary work achievements
  3. Significant impact to the culinary industry
  4. Significant impact to the society through community projects and others
  5. Significant impact to the preservation of the environment
  6. Take part in promoting Filipino Cuisine in the local and international market
  7. Research and Publication works (optional)

M E C H A N I C S

Submit nominations to the CCAAA Recognition Awards Committee on or before OCTOBER 7, 2011 together with the following documents in a sealed brown envelop:

  1. Letter of nomination indicating why the individual deserves recognition (Should be signed by nominator)
  2. Document evidences to support the nomination (certificates, photos, media articles, etc.)
  3. Curriculum vitae of nominee
  4. Recent photo of nominee (2x2 inches)
  5. The CCAAA Recognition Awards Committee reviews all documents for completeness. Nominations with incomplete requirements shall be returned to the nominator and shall not be accepted by the committee.

The CCAAA Recognition Awards Committee shall convene at a designated time and place to deliberate on the nominations using the criteria indicated for each award. 

The results of the evaluation shall be released before the end of October 2011. All nominees shall be informed formally through mail and phone call. The results released by the committee are irrevocable. 

Awarding of the Certificates of Recognition shall be presented to the awardees on November 26, 2011 on the occasion of the 15th Year Foundation Day Celebration of CCA Manila. All awards are honorific and are not attached to any monetary rewards. The CCAAA, however, may decide to present awardees with tokens as the committee sees fit.

 

The CCAAA Awards Committee:

The CCAAA Awards Committee shall be comprised of five individuals, namely:

  1. Two (2) members of the CCAAA Board of Directors (to be selected by the officers of the CCA Alumni Association)
  2. The President or CEO of the Cravings Group
  3. The Managing Director of the school
  4. One reputable culinary practitioner not affiliated with the Cravings Group (to be selected en banc by the above members)
